Congrats to grad

Congratulations to Alex Mosher of Lower Swatara who graduated with a bachelor’s of science degree in building construction from the College of Computing, Engineering and Construction of the University of North Florida. Alex is employed as a construction project engineer.

Crunchy Chicken Thighs

From the Wedding Book Collection

3 Tbs. honey

2 Tbs. mustard

3 tsp. lemon juice

1/8 tsp. garlic powder (or 1 clove, crushed)

Dash black pepper

1-1 1/2 c. dry bread crumbs (seasoned or regular)

6 to 8 chicken thighs

Combine ingredients, except bread crumbs and chicken, in medium bowl. Place bread crumbs on waxed paper or shallow pan. Roll chicken thighs in honey-mustard mixture, then in crumbs until well-coated. Melt 3 Tbs. butter on baking sheet. Place the chicken on sheet and bake at 400 degrees for 25 minutes. Turn carefully, then bake for 10 to 20 minutes, or more (depends on oven and size of thighs).

Dinner is served

All are invited to a chicken cordon bleu dinner (chicken stuffed with ham and Swiss cheese) from 4:30 to 6:30 p.m. Monday, May 21, at Evangelical United Methodist Church, 157 E. Water St., Middletown.

Also included in the cost: potato casserole, vegetables, salad, beverage and dessert.
